Liz- Founder & CEO

After working as a mediator, project manager, & consultant, Liz finally decided to shift gears & combine her love & adoration for her dog Jackson, versatile business acumen, love for seafood, and commitment to giving back to the community & founded Jax Seafood & Jax Chews.

Liz is a humbled member of the 40 Under 40 Class of 2022, which honors the top and most influential individuals & business movers and shakers in Massachusetts! She was also selected as the Volunteer of the Year Award in 2023 from the United Way of Central Massachusetts.


When she's not working on her projects, business, & procuring seafood, she likes to dedicate her time to her humanitarian work. Liz is a Volunteer Guardian Ad Litem (GAL) & Court Appointed Special Advocate (CASA) for the State of Massachusetts. She is also a member of the Board of Directors at The CASA Project Worcester County. She advocates for kids in the DCF system, in both life and in court. Liz also volunteers as a community mediator in the Worcester and Westborough  District Courts.

 

Liz is a long-time volunteer at the UMASS Cancer Center & Cancer Walk. She proudly sits on a volunteer board & steering committee for the UMASS  Cancer Walk & Run. She is a long-time volunteer for the Make-A-Wish Foundation's Massachusetts & Rhode Island Chapter, where she is a wish granter, special events volunteer, community Wish representative, Believe campaign facilitator, Kids for Wish Kids liaison, and Worcester County Volunteer Captain. She is a member of the Make a Wish Massachusetts and Rhode Island Advisory Council. She is a proud ambassador and member of Team Hope with the National Center For Missing and Exploited Children. She also works with and mentors fellow adoptees.  Her volunteer work has also taken her overseas to work on humanitarian projects in Ghana, Romania, & Colombia. In her spare time, she enjoys sharing  a glass of wine with friends and family, traveling the world, reading a good book, watching  true crime documentaries, laughing, eating great food, & spending time with Jackson, her fiancé, &  stepdaughter. She holds a Bachelor of Arts in Economics and a minor in Marketing from the University of Louisville, a Bachelor of Science in Business Administration from Purdue University, a graduate certificate in Diversity, Equity, and Inclusion from Cornell University, and successful MBA coursework from Purdue University.

Emma Connelly- Marketing Manager

Emma is originally from Westborough, MA, and is a recent graduate from James Madison University. She comes to JAX with a love for digital marketing and content creation. Emma has a wide variety of backgrounds working for WCVB Channel 5 News, Picture This Post Magazine, Mented Cosmetics, and the Chatham Anglers Baseball Team. Whether it be photography, paid advertisements, event planning, website design, etc, Emma does it. Fun fact: Emma won First Place in Sports News Photography in 2022 from The Virginia Press Association. 

When not working, you can find Emma working out, reading, baking cookies, spending time with family and friends, or volunteering. Feel free to reach out to Emma regarding any marketing ideas or events!

 

 

Sarah Coy- Market Manager

Sarah is originally from Los Angeles, CA, and is now a resident of Worcester, MA. Sarah comes to JAX with over 25 years of experience in the service industry. She is highly customer-focused and cares deeply about customer experience. A hairdresser by trade and running her own business for the last 10 years, she understands greatly, the importance of customer satisfaction.

Jackson LB 🐾 Managing Director/ President of Research & Development

Jax Seafood's namesake, inspiration and HBCIC ( Head Border Collie in Charge) is a rescued  Border Collie / Australian Shepherd mix who likes to keep things interesting, to say the least. When he isn't running Jax Seafood & Jax Chews, he enjoys spending time with his family, laying outside, not listening, not going for long walks, cuddling, masterminding his next escapade, eating, breaking into the pantry and cabinets, not getting yelled at by mom, and helping out other rescue dogs.
